Born in Brittany, France, he was introduced to the world of scents by his cousin, a perfumer at Chanel. While he initially studied biology in Paris, his fascination with aromas led him to enroll in the Givaudan Perfumery School, where he refined his craft.

With a career at Givaudan spanning over 20 years, Gillotin has become a highly sought-after expert known for his ability to reinvent classics through modern innovation. His most iconic creations include Ralph Lauren Polo Red, Dior Higher, and several masterpieces for Tom Ford, such as Tobacco Vanille, Noir, and Soleil Neige. In 2022, his exceptional talent and dedication were recognized by the American Society of Perfumers (ASP) with a prestigious Lifetime Achievement Award, solidifying his status as a master of the industry.
